Lunch for a Sweltering Summer Day

When it was too hot to turn on the oven we came up with a menu that was simple and simply delicious.

Lunch was Prosciutto and Melon. You can’t go wrong with fresh-cut cantaloupe married with thinly sliced Parma prosciutto, topped with a drizzle of olive oil and a sprinkling of white balsamic vinegar. Cheese of your choice is optional - mozzarella would be good, or Parmesan. I happened to have a Canadian brand called Five Brothers in my fridge so we enjoyed that.

For a delightfully refreshing beverage, we squeezed fresh lemons, added sugar syrup ( 1/2 cup sugar dissolved in 1/2 cup water). Along with water, I stirred in a couple of tablespoons of homemade strawberrry syrup to give the lemonade a pretty colour as well as a hint of berry flavour.

Baking was a no-go so our sweet treat was that old reliable, Rice Krispie squares. The recipe was NOT on the box but it’s etched into my brain: 1/4 cup melted butter, about 5 cups of mini marshmallows, also melted and 6 cups of Rice Krispies. Don’t forget the 1/2 teaspoon of vanilla!

MIx it up and then press gently into a lightly buttered 9 X 13 inch baking pan and refrigerate. Prepare to become addicted!
