Pizza for Two

Looking for an easy, delicious and semi-healthy lunch for two? I try to have the ingredients for this pizza on hand so I can whip up a hot meal on demand. All you need is store-bought naan bread (mine is from Farm Boy), fresh mozzarella, parmesan and arugula. If you happen to have prosciutto, all the better, but mushrooms are good too if you want to keep it vegetarian.

Sometimes the simplest things are the best!

Pizza for Two Recipe (Inspired by the NYT’s Green and White Pizza)

Ingredients

Two 8-inch naan breads

Fresh mozzarella cut up into small pieces

Extra virgin olive oil

About 1/3 cup of grated Parmesan

two big handfuls of arugula

fresh squeezed lemon juice

whatever else you’d like to add - mushrooms, prosciutto etc but not too many different things

Method

Preheat oven to 425°F

Meanwhile toss the arugula in a bowl with lemon juice and olive oil, salt and pepper to taste.

Place the naan on a baking sheet. Sprinkle with cut up mozzarella, then with olive oil, then parmesan. If using mushrooms, slice them and add now too.

Bake for about 8 - 10 minutes.

When the cheese is nice and toasty remove from oven and top with dressed arugula, then prosciutto if using.

You can cut the pizza into segments with kitchen scissors.

Tangy arugula is the perfect counterpart to the richness of the cheese.
