Peanut Butter Cookies
I’ve been making these treats for many years, ever since my kids were small and I received a free Quaker Oats cook book (pamphlet really) in the mail. Full name The Quaker Oats Wholegrain Cookbook. My copy has been taped together and is missing the cover’s front corner. The pages are stained with age and splattered ingredients, but in a good way!
I have a couple of favourite recipes from this book, including one for Scottish Oat Scones that are a staple in my Tea Time Treats repertoire, but these Peanut Butter Dreams are yes, dreamy.
You start by making the flour - that’s right you make your own flour by blitzing Old Fashioned oats in your blender or food processor (I use my handy Ninja, so fast.)
Then you combine the softened butter, peanut butter, sugar and eggs and to that you add the dry ingredients. Easy peasy. Important to chill for an hour in the refrigerator.
The recipe makes a ton of cookies - three full half sheet pans (that sounds a bit contradictory!)
Lovely with tea or when you just need a pick me up.
P.S. I reduced the sugar to 3/4 cup of both white and brown - result is still plenty sweet!
RECIPE - PEANUT BUTTER DREAMS
1 cup butter or margerine
1 cup peanut butter (smooth or crunchy)
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
2 1/2 cups ground oat flour ( from 3 cups of oatmeal)
2 tsp baking soda
1/4 tsp salt
Beat together butter, peanut butter and sugars. Blend in eggs and vanilla. Add combined dry ingredients, mix well. Chill dough about 1 hour. Shape to form 1 inch balls. Place on ungreased cookie sheet. Flatten with a fork. Bake in 350F oven about 10 minutes and enjoy.
