Scottish Oat Scones

Oaty goodness studded with rum-soaked raisins

On a dark November day these Scottish Oat Scones are like an old friend - familiar, comforting, and easy.

I’ve been making them for years and they always taste great - especially with butter and jam for afternoon tea.

Afternoon tea for two!

Here is the recipe:

2/3 cup butter, melted

1/3 cup milk

1 3/4 cups uncooked oatmeat - I use large flake oats

1 1/2 cups all purpose flour

1/4 cup sugar

1 Tablespoon baking powder

1/2 teaspoon salt

1/2 cup raisins or currants

Method:

Add butter, milk and egg to combined oats, flour, sugar, baking powder and salt. Mix well. Stir in raisins - if your raisins are a bit hard you can soak them like I did in a bit of rum to soften.

Pat mixture out on a lightly floured surface to form triangles (or whatever shape takes your fancy!) Place on greased cookie sheet and bake in preheated 425° oven for about 12 minutes. Buon appetito!
