Banana Bread

My recipe for Banana Bread came from a former next door neighbour, an older lady who always dressed impeccably, even to weed her garden. I sat in her kitchen one day and watched her grate a large pile of orange rind for this recipe. I think she cheated and used more than one orange!

Pans are buttered and batter is ready!

Grace’s Banana Bread

Ingredients

1 cup white sugar

½ cup vegetable oil

2 large eggs

3 medium bananas mashed

1 orange, rind grated and juiced - require ½ cup liquid altogether so measure juice and add milk if necessary to make enough

1 cup chopped pecans (I always toast the nuts first for better flavour)

2 ½ cups flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp vanilla

Instructions

Mix in order listed. No mixer necessary - we love one bowl baking!

Bake in a loaf pan (I use two small ones) at 300 F for an hour or so - you need to test with a toothpick cause it depends on the size of the pans.

Delicious toasted with butter and a cup of Jasmine Mist tea!
